German Crunch Cookies

I am submitting this to Aspiring Bakers #3 - My Favourite CNY cookies. 

I saw a few bloggers submitting this to aspiring Baker #3 - my favourite cny cookies but saw the post at crustabakes and small small baker.  This cookie looks melt-in-the-mouth and easy to make so here is my submission to aspiring baker #3 - my favourite cny cookies.




Ingredients:
125g butter
40g icing sugar
125g potato starch
80g superfine flour (I used plain flour)

Method:
Beat butter and icing sugar till fluffy and lighter in color,\.

Sieve in potato starch and flour, mix to form a soft dough.

Roll into small balls (about 2cm in diameter), arrange on lined baking tray and press lightly with a fork (dipping the fork in water after each press to prevent cookie dough from sticking to the fork).
Bake in a pre-heated oven at 170 deg C for 15 mins, upper deck (need not bake till cookies turn brown).
