Almond Crusted Butter Cake

This is the fifth cake that the THB is baking from the Coffee Cakes by Seibert Pappas organised by Joyce from kitchen flavours but for whatever reasons this is my second cake for this event.

I baked only half the recipe using a 6 x 6 square pan.  I love the crisp of the almond flaks and the cake is quite fine in texture.  I find it quite challenging to scatter the almond flaks on the sides of the greased pan. :)

    Your cake looks moist, and a great idea to scatter the almond flakes on top and at the bottom, I did not do that, and kinda regret that, as I love the almonds!

  6. Never tried to scatter the almond flakes at the bottom and sides. Yup, do agree with you that scattering on the side can be challenging.

  7. I couldn't get the almonds to stick as well! But you did a really good job as you manage to get so many of the almonds to stick! I got really lazy in the end and just reserve about 1/2 of them for the top... haha. Your cake looks delicious!

    Nice to have you baking with at THB. Unlike mine, I see lots of almonds in your cake. Like the idea of scattering the almond flakes on the top of your cake.

      That was because those at the sides kept falling, so I decided to scatter them at the bottom and top of cake! haha
