Cocoa Butter cake





Cocoa Butter Cake

250g butter, softened
160g caster sugar
4 large eggs, room temperature
2tsp vanilla extract
60ml milk
190g cake flour
30g cocoa powder (I used Valharna cocoa powder)
1.5 tsp baking powder

Method:
1. Preheat oven to 170 deg C.
2. Grease 8" pan and line bottom.
3. Cream butter and sugar until light and fluffy.
4. Add eggs, one at a time.  Beat at high speed for one min to incorporate air into batter.
5. Add milk and vanilla extract and beat till combined.
6. Sieve in cake flour, cocoa powder and baking powder.
7. Beat till just combined.
8. Pour into baking tin, drop tin on counter top a few times to remove big bubbles.
9. Bake for 50 - 55 mins or until skewer comes out clean - its done.
