Cornflakes Cookies (Honey Joys)

I didnt know these were known as honey joys.  When I saw the photos I thought they looked very close to what my colleague let me tried and was telling me how good they were.  She told me maple essence was added and this is one ingredient that is not easily available.  I was thinking "wow, what so great about this maple essence" and I did checked with one or two seasoned bakers who told me maple essence is not available in Singapore but can be replaced with maple syrup.  To me it was like dont have either dont do or dont add. 

So when I was this at Happy Home Baking, I thought "dont they look like what I was offered" and I read through the ingredients no maple essence was called for and it was easy and looks good to snack on too.  I have all the ingredients so I decided to give it a try and the taste was really close and almost the same as I what my colleague had let me try.

Besides cornflakes, the almond flaks and sesame seeds greatly enhance palatability and flavour of these buttery sweet snacks, making them a real crunchy and joyful treat for anyone, on any occasion.  This will be be Chinese New Year cookie next year.





 
Honey Joys (Recipe source: Happy Home Baking)
Ingredients:

60g unsalted butter
50g honey
1 tablespoon granulated sugar
1/4 teaspoon salt
100g corn flakes
100g almond flakes, lightly toasted
3 tablespoons white sesame seeds, lightly toasted
Method:
  • Place corn flakes, almond, sesame seeds in a big mixing bowl.
  • Melt butter, honey, sugar and salt in a saucepan, stir to combine. Remove from heat and pour mixture over the corn flakes, almond and sesame seeds. Keep mixing with a spoon until evenly coated.
  • Spoon cornflake mixture into mini paper case and bake on baking tray at 150°C for 12-15 minutes until golden. Cool completely, store in airtight container.

  1. Hi Yummy Bakes, maybe you can try replace the honey with maple syrup so that it will taste even closer to the ones you had?
