I have for the last two years started to learn cooking but no fun leh. I think baking is anytime more enjoyable to cooking. Every day got crack my head what to cook, and and the market another round of headache - what to buy. Why cant we just have cakes/pastries every for a change? Why must eat rice? Well at least for me I am a bread person - I can have bread for my 3 meals without a problem. Some of my friends/colleagues call me roti queen!
But one-dish-meal does solves a lot of headache. What do you think of this stir-fried egg noodles? Well, I love it .... Simple and 好吃

- 200g dried egg noodles 雞蛋面
- 200g sausages (I use cheese sausages), sliced
- 200g hon shimeji mushrooms, bottom ends trimmed
- 3 bunches of baby bok choy (xiao bai cai), trimmed to shorter lengths
- 1 egg, beaten with 1/2 tsp light soy sauce added
- 150g frozen peas (I use assorted frozen peas, carrots and corn)
- 2 tbsp cooking oil
- 4 garlic cloves, peeled and chopped finely
- 200g sausages (I use cheese sausages), sliced

- 3 bunches of baby bok choy (xiao bai cai), trimmed to shorter lengths
- 1 egg, beaten with 1/2 tsp light soy sauce added
- 150g frozen peas (I use assorted frozen peas, carrots and corn)
- 2 tbsp cooking oil
- 4 garlic cloves, peeled and chopped finely
Seasonings
- 3 tsp light soy sauce
- dash of ground white pepper
- 1/2 tbsp fish sauce (optional)
- 3 tsp light soy sauce

Directions
1. In a pot of boiling water, add egg noodles and cook according to package instructions. Drain and set aside.
2. Heat cooking oil in wok and fry garlic till fragrant. Add mushrooms and stir fry for a minute or two. Add sliced sausages and frozen peas and stir fry for another minute.
3. Add cooked egg noodles prepared in step 1. Add seasonings and using either a ladle or a pair of kitchen tongs, stir well so that the seasonings are absorbed evenly. Add baby bok choy and stir till they are cooked (just a few seconds).
4. Pour beaten egg slowly and evenly over the noodles. Stir fry everything in the wok till the egg is cooked.

Your egg noodles look very delicious. I also prefer to eat noodles more than rice.

Deletethis noodles are definately ho chiak for me! i think i eat more noodles than rice on a weekly basis. I enjoy going to the wet market here, yeah i understand what you mean, going round and round and still do not know what to buy..we just got to crack our heads!
