Sweet and Sour Tau Kwa

This is also adapted from the book
"Cooking for Kids" by Pancy Seng.

Ingredients:

1/4 tsp salt
4 pieces soy bean (tau kwa) (cut into 8 pieces each)
1 cucumber (skin and seed removed then shredded)
1/2 carrot (peeled and shredded)
2 tsp sesame seeds (fried till fragrant)

Sweet and Sour Sauce:

6 tbsp tomato sauce
1 1/2 tbsp castor sugar
50ml water
2 tsp cornstarch (mixed with 1 1/2 tsp of water)
2 tomatoes (cut into small pieces)
1/4 tsp salt



Method:

1. Heat up so oil, add salt then deep-
fry tao kwa till fragrant and crispy.
Remove to drain the oil.

2. To make the sauce: Add tomato

sauce, sugar and water to oil oil.
When the sugar has dissolved, add
cornstarch water and cook till the
sauce thickens.

3. Add tomatoes and salt. Stir well.


4. Pour the sauce over the tau kwa,
lay cucumber and carrot shreds on top and scatter some sesame seeds before serving.

Pancy's Notes:
Adding a little salt in the oil when deep-frying prevents the tau kwa from sticking onto the wok and gives a much crispier result.
