Common ingredients easily available at the markets can be used to whip up a light lunch without fuss - potato salad. Thanks to Hong's kitchen.
Ingredients:
300g potatoes, peeled and cut into pieces
2 green onions, cut into small portions
2 chinese parsely, cut into small portion (I replaced this with lettuce)
2 tbsp mayonnaise
Seasoning:
1 tsp salt
Method:
1. Steam the potatoes for 10 minutes or until tender.
2. Let the potatoes cool to room temperature. Mix well with mayonnaise.
3. Add the chinese parsely and spring onions and mix well.
4. Add the seasoning to taste.
5. Chill for about 2 hours and ready to be served.
