Neverfail Cup Cakes






The name neverfail cup cakes didnt fail but my day failed terribly today!! Probably I should be relaxing and resting to get ready to start work for the new year!
First, I spilt the sugar and then I dropped an egg and ended having extra work to clean the mess. Then when the batter is all whipped and ready to go into the cups, I couldnt find my paper cups. Rushed down to NTUC ..... guess what happened - no stocks!! Gosh what a lousy day. Last resort, went to a nearby grocery shop also no stock but LUCKILY managed to find the aluminium foil cups!!! Phew ...
The first time I tried this cake, wrong conversions were given to me. It didnt failed to live up to its name despite the wrong conversions used - just too sweet. I like the nice golden color of this cake. Here's the receipe:
1/2 cup (115g) softened butter
2 eggs
3/4 vanilla essence
1 1/2 cups plain flour
1/2 cup milk
1 cup sugar
1/4 tsp salt (omit if you are using salted butter)
2 tsp baking powder
Method:
1. Preheat oven to 180 deg C. Combine all ingredients in a mixing bowl and beat until smooth with electric mixer.
2. Place mixture into greased (or lined) cupcake trays using a spoon.
3. Bake at 180 Deg for about 15 min or until a skewer inserted comes out clean.
(if you feel its too sweet, take out 1-2 tbsps of sugar from the one cup. This is definitely a must try, one of gthe easiest recipe ever and you can mix-in or top with whatever you fancy).
