Soft and Moist Banana Cake




Thought I could take a longer break from baking but after two weeks' break, here I am indulging in 'sinful' bakes again. I saw this receipe sometime ago but I can't remember from which blog. I have put off baking this cake until today. It really lives up to its name - soft and moist.

Ingredients:
250g salted butter
1 1/2 cups castor sugar
4 eggs
1 tsp vanilla essence
4 tbsp milk
1 1/2 cups mashed bananas
2 cups plain flour (sieve with 1 tsp bicarbonate of soda and 1 tsp baking powder)
some walnuts to sprinkle on top

Method:
1. Cream butter and sugar in a mixing blowl. Add in eggs, vanilla essence and milk and mix well.

2. Add in mashed bananas into the mixture and mix well. Finally, add in sifted flour and mix well.

3. Bake in preheated oven at 170 deg C for 1 hour or until a skewer inserted into the centre of the cake and comes out clean. If the top layer turns brown after 15 minutes, cover it with aluminium foil.

4. Cool cake .... and serve.

  3. Mmmmm....my favourite cake. I love banana cakes. I love the look of all the banana pieces in your cake here. Looks very moist and delicious. How I wish I can have a piece now to go with my coffee.
