Lime Chiffon

This flavor is very refreshing and I love the sourish taste.  Its very soft and fluffy.








Recipe adapted from Katehrine Kwa

Ingredients: (22cm tube pan)

5 egg yolks
30g caster sugar
60ml corn oil/sunflower oil
70ml water
1tsp grated lime peel
125g plain flour or cake flour

5 egg whites
90g caster sugar

Glaze Icing
70g icing sugar      } Mix together to a spreadable consistency
1.5 tbsp. lime juice }

Method:
1. Preheat oven to 150 deg C.
2. Whisk egg yolks with 30g sugar.  Add oil, lime juice, 70ml water - mix well.
3. Add in sieved flour, lime peel.
4. Beat egg whites till foamy, add sugar gradually in 3 batches.  Beat till stiff peaks form.
5. Fold 1/3 meringue to yolk mixture.  pour batter into remaining meringue and fold well.
6. Pour into 22cm tube pan.  Tab few times on table counter and level it.
7. Bake at 150 deg for 45 mins.  Then 180 deg for 10 mins.
8. Decorate with glaze icing and sprinkle some lime peel
