Custard Cake


I was very captivated by the colour and name of this cake.  It’s a one bowl, no fuss delicious cake and I have a small balance of custard powder to clear – perfect for this cake – no more no less!






Recipe source: To Food with Love

2 cups self-raising flour, sifted
250g butter at room temperature
1 tsp vanilla extract
Rind of 1 lemon, finely grated
1 3/4 cups caster sugar (I used 200g but can be increased to 220g)
4 eggs
3/4 cup custard powder
1 cup milk

Method

Preheat oven to 180C (or 160C fan-forced). Cream butter and sugar with vanilla extract, lemon rind and sugar. Beat in eggs one at a time until well combined. Add flour, custard powder and milk and beat at very low speed until just combined. Pour into lined 23cm deep square tin. Bake for 50-60 minutes or until a skewer inserted comes out clean. Turn onto a cooling rack

  4. It's happening to me too, my custard powder always turn a waste to the dustbin. Now, I know to find the recipe :) The cake looks really good.

  12. Just baked it. I used soft brown sugar instead of granulated so the color is not so yellow. And cake flour instead of APF. The cake has an eggy flavor... very mild, could be the 1.5tsp baking power too.....

    very moist and tender!
