Neither have I heard nor tried Italian apple cupcakes until I saw what Ann posted. I like the huge chunks of apples in the cake and yes, these are fuss-free to make and soft, and moist with every bite.....
Ingredients:
180g butter
150g caster sugar
3 eggs (about 70g each), lightly beaten
180g plain flour (sieved)
1/2 tsp baking powder
1 tsp cinnamon powder (I used 1/2 tsp)
4 green apples, thinly sliced (I used 3 1/2 apples)
Method:
- Cream butter and sugar till light and creamy at medium speed. Reduce speed, add in eggs bit by bit till well mixed and add in sieved flour, baking powder and cinnamon powder.
- Off machine and use a rubber spatula to mix the flour well and add in all the sliced apples, mix well.
- Scoop mixture into cups and bake at preheated oven at 170 deg C for approximately 35 minutes.I am submitting this to Aspiring Bakers #13: Enjoy Cupcakes (November 2011) hosted by Min of Min's blog.

I love a good apple muffin...esp. when it's flavoured with warm winter spices. Those look perfectly moist, soft and delectable.
