Pumpkin Fritters

I think this would certainly make  another good finger food.  I have book-marked and put it aside for a while until recently ....
This is taken from the book byPancy Seng and although the title of the book says "Cooking for Kids", I feel that there are a lot of nice dishes which adults would equally enjoy it.


Ingredients:
180g self raising flour
150g shredded pumpkin
280 ml water
1 egg
120g whitebaits (silver fish)
5 shallots (sliced)
1 chilli (pounded)
1 tbsp chopped onions
1/4 tsp turmeric powder (kunyit powder)
1 tsp salt
1/2 tsp pepper
oil for deep frying

Method:
1. Mix well self-raising flour, pumpkin shreds and water. Then add egg and whitebaits and mix further.
2. Put in sliced shallots, chilli, spring onion and tumeric powder, stir well before adding salt and pepper.
3. Heat oil in a pan, place 1 tablespoon of pumpkin batter into it and deep fry till the fritters turn golden brown.

Pancy's kitchen notes
Chilli is added in this traditional Indonesian dish. You may choose not to if your kids do not like spicy food.
Deep fried fritters are much crispier. If you mind the oiliness however, pan-fry them in a non-stick pan till both sides turn golden brown.

Its easy to prepare right? Arent you attracted to the nice golden color?

  5. What a great way to get kids to eat more pumpkin! My son loves pumpkin but not the girls, definitely going to try this one day.
