I am submitting this for the Aspiring Bakers #3 - my favourite CNY cookies hosted by j3ss kitchn.
This cookie recipe is adapted from dailydelicious. A timely one to clear the balance cornmeal sitting in my fridge.
Ingredients:
120g all purpose flour (I used plain flour)
80g Yellow Cornmeal
1tsp sea salt (if using table salt us 1/2 tsp)
115g unsalted butter (softened)
100g sugar
1/2 tsp grated orange zest
1 egg (separated)
150g jam of your choice
Method:
1. Preheat oven to 180 deg C. Line the baking sheet with baking paper or silicone baking mat.
2. Whisk flour, cornmeal and salt together and set aside for later use.
3. Beat the butter and 50g sugar until pale (abt 2 mins), add in orange zest and beat to combine follow by the yolk and beat to combine.
4. Add in the flour mixture into the bowl and beat with low speed until well combined, press the dough with your hand to make them stick together.
5. Using a #50 scoop (spoon about 2 tsp of dough and roll them into a ball) scoop the dough and place on the baking sheet.
6. Put the rest of sugar in a small bowl lightly beat the egg white, then dip the cookie in the egg white and coat with sugar and using a measuring spoon to make a print (I used 1/2 tsp). Bake for 15-17 mins or until golden color.
7. Take out from the oven and using a measuring spoon to make a deeper print. Let the cookies cool on a wire rack.
8. When the cookies have cooled completely, put the jam in a microwable bowl, heat for 40-60 seconds or until boil. Spoon the jam into the hole and let the jam cool.
