Cheese cupcakes

Yummy Bakes | 8:56 AM |
The name of this cake arouse my curiosity and has spurred me to try it out. I like the good balance of savory/sweet and the cake is very soft and moist.

This recipe is taken from Anncoo Journal's blog.

Thanks, Ann for sharing - very nice cupcakes.

These little cakes will definitely not disappoint you ....

Ingredients: (makes 10-12 cupcakes)
180g Butter
130g Sugar
3 Eggs
165 Self raising flour
80g Grated Cheddar cheese (I used 90g)
1 1/2tbsp Full cream milk

Method:

Beat butter, sugar and eggs together.
Dump in flour, mix at low speed for a minute.
Add in grated cheddar cheese and milk and mix for 30 second.
Use a rubber spatula mix well and scoop batter into cupcake cases.
Bake at 170C for 25 mins.
Cool on wire rack
