Potato Tarts

This is one of the my favourite bakes (and also my family's) which I learnt many years ago when I started my baking lesssons - potato tarts.

It is also something which I have not baked for a while and missed by many at home. Reason being that I found so many delicious goodies in so many great blogs that I have shelved my own collections. At the request of my neices and nephew I am sharing these tarts with those who are keen to try.


A not so common snacks on the market. If these tarts have 'won' your attention, you may want to try it out and serve for afternoon tea.




Ingredients for the pastry:
250g butter
110g icing sugar
1 tsp baking powder
450g flour (half plain flour and half HK flour)
1 tsp salt (omit this if you are using salted butter)
2 egg yolks

- Beat butter, icing sugar and salt for 10 minutes, add egg yolks, one at a time then add in flour.
- Use small flower metal cups as a mould.

Ingredients for the filling:
150g butter
120g fine sugar
2 eggs
100g HK flour
1 tsp baking powder
1 tsp salt
350g cooked potatoes

Method:
- Beat butter, sugar on high speed till pale in colour then add eggs, one at a time until well incorporated. Add in potatoes and flour.
- Place the filling into the cups and bake for about 25 minutes at 170 deg.

  2. Anncoo, Yes you need to mash the potatoes. Worth trying but eaten warm best when it is still crisp. The pastry would have softened if eaten the following day.

    This recipe is rather unique! I remember having potato tarts from crystal jade cakery. Theirs is more potato-ish for the filling. Your version has a potato cake filling in the middle. wonder how the taste is like...

  6. Anonymous - if you caster sugar, the pastry will be very grainy/rough.

    Busygran - some can't tell its potatoes when they ate it.

    Bakertan - yes, we love the tarts - very unique. Very nice - give it a try if you love potatoes.
