  21. Hi Catherine, Nice to meet you and thanks for your interest in the Oreo and raisin cupcakes. Actually, I got it from Auntyyochana's blog. There are lots of nice goodies to pick up. Anyway, here is the receipe:

    235g self raising flour
    100g oreo cookies - crushed
    40g raisins
    230g unsalted butter
    180g fine sugar
    4 eggs
    1/4 tsp salt (omit this if you are using salted butter)

    Beat butter, sugar and salt till slightly creamy, add in eggs and flour, and mix till well combined. Then beat at high speed till smooth and pale about 2-3 mins.

    Stir in crushed in oreo biscuits and raisins.

    Spoon into muffin/paper cups and bake for about 25 mins at 190oC.

    Try it - its simple and nice. Sharon has tried it too. Actully thanks to yochana for sharing the great receipe. yeah
