Tropical Cool


The weather  lately has had many of us craving for ice-cold desserts, drinks or anything to beat the sweltering heat. 

I stumbled upon this dessert in a newspaper recently.  It used FairPrice juice drinks (these are made-in-Singapore treats) which come in flavours like Apple Juice with Aloe Vera, Orange Juice drink with pulp and Calamansi Honey drink that delicious thirst quenchers.




Combine delicious juice drinks with tropical fruit cocktail for an irresistible dessert ...





Recipe adapted from TODAY of 7 June 2012

Orange Cocktail Jelly
(serves 4)

Ingredients:
1 1/2 tbsp gelatine powder
1/4 cup cold water
1/2 cup boiling water
1 bottle FairPrice Orange Juice Drink with Pulp (375ml)
1 cup fruit cocktail, drained

Method:
  1. Soak gelatine powder in the cold water for 20 minutes.
  2. Pour the gelatine mixture into the boiling water and stir until dissolved.
  3. Add orange juice and stir until evenly mixed.  Set aside.
  4. Spoon cocktail into a large jelly mould or individual moulds or glasses.  Pour orange juice mixture over the cocktail and chill for at least two hours, or until firm.  Serve cold.

  2. I always thought that gelatin won't set with orange juice (don't know why!). This would be a nice treat for dessert, although I'll probably use a different juice because my kids don't like orange juice :p

    1. It has never occurred to me that gelantine will only set with certain juices. Give a try when you have a chance.
